Sigil's interface to the hunspell Spellchecker is now limited to one dictionary at a time. This would take significant work to change this. I will think about this as it is not high priority at the moment given the many pieces of epub3 still yet to support.

That said, the spellcheck interface/hunspell is available to plugins and so someone might be able to pull together a multi-language spellcheck plugin if they were interested.
