Selecting a word pops up a menu. One of the items is a magnifying glass and tapping that starts a search using the selection. If you don't want to start with a selection, tap the middle of the page to bring up the top menu and tap the magnifying glass to start a search.
Sorry, don't have am iPhone, so I can't compare. But, I have never had any issues with the iPad app, the Android app or the Kobo devices showing different things in their contents lists. Whenever I have compared them, they have always been the same.

I tap the top right hand corner with no menu displayed and it just turns the page
I tap a word and that just makes the Facebook symbol and the flag appear on the top right of the page and the list of utilities appear on the bottom right.
I did find the chapter list. It's at the beginning of the book but I tap a chapter and it doesn't take to that chapter but again makes the Facebook symbol appear along with the list of utilities.
