"Preferences > Misc > install command line tools"
was removed after Apple deprecated that method of gaining root privileges.

However, you can create the symlinks manually. Or automatically, if you install calibre via homebrew cask or my standalone updater daemon here: https://www.mobileread.com/forums/sho...d.php?t=260255
