If you tap on the three uneven lines next to the shopping cart on the right upper side of the screen you can select list instead of grid. When I do this and open a book and then go back to library it stays this way.
If I change to a list view using the three even lines on the left side of the screen and go to settings - it does as you describe and the library stays as a sideways scroll bookshelf.
I do have 5.1.1 but I think it's been the same since KitKat.
