Amazon handle it very well.

If it's a major update, they send you an email telling you that the update is available and asking you if you want it.

If it's a minor update, they don't notify you, but if you go to the "Manage Your Content and Devices" section of the Amazon website, and look through your list of books, you see "Update Available" alongside the book, and you can then send it to whatever device(s) you wish. I look through the list every few months and download all the updates (typically about a dozen every 3 months or so).
