Some Buddhist traditions eschews meats as well as killing living things, going so far avoid killing snails and roaches. Some monks will eat meat on certain conditions. Some have no compunction about eating anything. So it's not a hippie thing.

The Christian author Matthew Scully argues that man's God granted dominion over the earth morally compels him to be an environmental steward and to treat animal life with mercy. His revulsion to large scale animal suffering in factory farming led him to become a vegetarian and a vegan.

As to the leather question, vegans don't want to use animal product even though the animal is already killed -- for the same reason pro life activists oppose embryonic stem cell research even when using embryos created for purpose of infertility treatment that will not be used and instead be destroyed anyway
