I think it all relates to the fact that I have multiple documents open in Office Tabs tabs, if you went back to when I started using the tools you'd see I had all sorts of issues with conversion, that's why I never used it.
As well as the smart quotes issue each of the 7 documents I had open had a couple of odd styles attached to them and applied, everything that was Normal became something like List Indent One or List 2, there is no way I would have done that. In all my other documents they are hidden until used - and they're never used. Luckily Word can search for styles.
Re the Ribbon hiding settings, I missed seeing the lower ones. I did stretch the window to make it taller, but the scroll bar doesn't stretch with the window, and PgDn PgUp don't move anything, so after
