I love using the kindle, but my biggest issues are the adds and it knows too much personal information and then tries to post that info publicly. Once I realized that it updates automatically when you go on wifi, I have not put the device on wifi since. I keep it in airplane mode.
If someone could point me to the right forum post that explains the above, that would be so awesome. I may be using the wrong words to search for the right answers.

It is possible to get around all the issues you listed.
First Never ever use your normal email when signing up for things. Have a second (or more) email that you can use that has few if any correct facts. A credit card might be necessary, though usually not, but not all the other stuff. When asked, give incorrect information.
A secondary email will prevent most problems.
