Short answer: You can't change the path format, nor should you try, nor should you care. The library folder is Calibre's domain, and you should treat it as a black box. You don't go in there, you don't change anything in there. If you do it anyway, you will break your library, which is not a good thing.

You did nothing wrong. What you did was make a export (a copy) of your library, using a path model. The original library is untouched.
