If you cannot find dulce de Leche in your local store, get a can of Eagle Brand Milk (not a store brand) and set it in boiling water unopened for 5 hours. Check the water periodically. Make sure the can stays completely covered.
Oh, we're so sophisticated here in this town where I live that dulce de Leche is carried in all of the convenience stores around town. hahahah

A common complaint that I see in cookbook reviews at Amazon is that the ingredients are so specialized and unusual that they can't find them in stores around where they live. That may be a downside to this book.
