To change where "Search online for <word>" searches, go to Viewer Preferences->General and change Google to whatever.
To change the Lookup dictionaries, go to Viewer Preferences->Dictionaries and replace what's there (for English I think its Wordnik) with your favourite dictionary.
To 'standardise' publisher names you could
- Use the Manage Publishers list, which you can get at by right clicking any publisher name in the Tag Browser
- right click on an erroneous name in the Tag Browser and use the Rename option to change it to your preferred name
Both will take care of all books that use the 'bad' publisher name(s)
