Haven't the accurate count, but Steven Eriksons Malazan books should be above 1000 pages. There are 10 books in the finished series. Ian Esslemont writes in the same Universe, most of his books are above the count too (6 more books). Both have started a new series in the universe each.

George R. R. Martins books are doorstoppers too and very good.

Fantasy is full of doorstoppers The above series are together with Jordans among the longest (and best).

Tad Williams books are doorstoppers too and quite good. I liked the more sci fi otherworld books more than the fantasy books. The fantasy books are very well written, but very traditional and therefor little bit boring regarding the big story arch.
