Some of the candidates that come to mind are Robert Jordan, Terry Goodkind and Brian Sanderson. However for my purposes I disqualify Robert Jordan since he is dead. For my purposes the author must be aliver and writting.
Ash by Mary Gentle (huge single volume epic fantasy)

Almost everything written by Peter F. Hamilton, but I suggest the Night's Dawn Trilogy (sci fi). Each book is massive.

The Stand by Stephen King

Almost every Tad Williams book is close to or over 1000 pages in paperback, or split at publication.
