Well, you choose -
1) Leave it jailbroken
1a) Ensure you have the most recent jb for your device installed
1b) Un-install anything that has an un-installer
1c) Use the Amazon update on it - the (current) jb will re-install itself.
1d) Use a secure erase program on the visible FAT-32 user storage, otherwise everything you had on user storage can be recovered by the next owner.

2) Leave it factory stock
2a) Un-install anything that has an un-installer
2b) Home -> Menu -> Settings -> Menu -> (factory) Reset
2c) Use the Amazon update on it - the factory reset has wiped out the jb 'survival kit'
(Also known as: Kiss of death)
2d) Use a secure erase program on the visible FAT-32 user storage, otherwise everything you had on user storage can be recovered by the next owner.
