That process **should** have ended with a restart, which would have included the "Bridging ..." message -
Then you did a "Factory Reset". Which would have cleared the user's part of the system image - including the things that make the jailbreak survive.

Translation: Your 5.7.3 image **should** be jailbroken.
All you did was trash out the safety net that would protect it from the next update.

If IIRC above, then my question now is:
What makes you think your main image is not still jailbroken?
Are there some things you are not telling us?

It most likely is and what you need to do is re-install the "bridge" package.
