Agreed. Their recipes are usually quite reliable, assuming you carefully read their assumptions and agree with them. But I don't go to them to get Mexican recipes (Diana Kennedy or Rick Bayliss are more likely to get my nod there, or just make it up as I go), and in general for ethnic cooking, I'll usually at least
try to find a more authentic source and ingredients. But that's not always easy (especially in remote Canada), so the substitutions that ATK uses are often a good way around the problem.
