What is the problem? Just jailbreak now, then go ahead and use WhisperSync, PDOCs, etc.
There is no need to worry about OTA updates, at least, an OTA won't destroy a working jailbreak.
If you are concerned that you will get nailed by the OTA while trying to jailbreak, use a smartphone hotspot or ad-hoc network via create_ap, or something like that. It's been mentioned and linked several times -- which OS do you use?
