Copy (/backup) the entire documents folder onto a PC. Once your jailbroken and have re-registered the Kindle with the same account you used before - copy the contents of the documents folder over to your Kindle again.
All books will at first register as new - but as soon as you open them the reading progression should be back to where you left the book. At least I've experienced those results.
