I don't have the T68 anymore, but I think I had the same issue on my T62. After selecting Language and keyboard from the settings menu (about halfway down?), the top selection in Chinese there should be where you need to tap to be able to choose English. The choice will be in English so you just need to scroll until you see it. Here's a screenshot of the Language and keyboard screen from my T62 - where you see English(United States) on the top of the screen is where you will need to tap to get to the list of languages.
