Question about Collections and how to organise them using Calibre

Firstly, I apologise if this is not the right place to ask this question. I am here in desperation and find my forum-management skills are not that great.

Recently, after finally giving up on Sony Reader as a management app for my PRS-T3, I started to use Calibre to put my books on. And Calibre has so much that Sony Reader is unaware of the need for. However, when I synced my library from Calibre, I encountered one very troubling problem. In Sony Reader, one creates Collections manually and adds books to them as one pleases. My usual technique is to create a library with the author's name or a description of the series the book belongs to. "Robert Heinlein" or "Doctor Who New Adventures" for example.

On my PRS-T3 after syncing it with Calibre, I have collections with names like "Adult", "1965", "American", "Asia", "Authorship", even "metadata" (for crying out loud) and so on. And twenty-five pages of these collection titles that are utterly unhelpful.

My question is essentially what procedures exist to create, edit, and delete what is called Collections in the PRS-T3 menu, and where can I find them? As a supplementary, how can I make Calibre behave and understand that tags are not Collections?
