Is "
using Calibre on my tablet" a reference to Calibre Companion on an Android tablet? If it is then I wouldn't have thought that changing the order of books in CC would change the content of what's in Dropbox. You might want to raise that in the CC forum.
But that said, the 'golden rule' is :- if you keep your library on a cloud service, ensure you disable syncing when the calibre library manager is running, and I would guess if you're running any Command Line features that update the library.
