Humble Bundle is as safe as any other reasonably reliable retailer website. I've been buying stuff from them for years without any noticeable problems. Here's

If you don't want to enter your CC info directly, you can pay via Paypal or Amazon Payments, or even Bitcoin if you prefer. They'll charge you in USD.
If you decide to only get the lowest pay-what-you-want tier or the better-than-average just to try the books out, you can later upgrade to the top tier to get all the books, by topping up your original pledge directly from the weblink you get to your downloads. Just click on the "Like what we're doing?" link to expand the drop-down, and then use the Custom Amount field to adjust your total combined payment to the tier you want (if your new total is below the minimum for a certain level, it will warn you that you'll be missing out on certain titles and tell you how much extra you need to add to get them). NB: don't use the "buy as gift" option if you're expecting to maybe top up your pledge. Apparently, they hide the gift amounts paid, and the recipients can't adjust them.
If you create an account with them, the links to all your purchases will be maintained in your library automatically. ETA: if you want to do the topping-up, you have to do it within either 30 days of initial purchase, or 30 days of the bundle offer's expiry date, I forget which. Either way, it's for a limited window of time that I usually do during the second week, after the extra books added to the middle tier have been revealed.
