- Use calibre's "polish" function to update the cover in the ebook, then fetch it again to the device.

- Convert the book again, for example from epub to epub. This is a sledgehammer approach.
There are lots of threads in the calibre/Library management forum on ways to update covers along with ways to overcome problems.

In fact, what I meant was even I changed the cover in Calibre, it remained the same once in Calibre Companion.
However I fixed the issue by checking the small box allowing Calibre to sync the metadata (can't find it anymore to give you its exact name, sorry.)
