I've seen (and used) resolutions as high as 2500 pixels on the long side, but as it makes the book load slower, display slower in calibre, and use more space, I've since decided to keep the resolution at 1000 to 1200 pixels on the long side. If a cover I find falls in between that, I don't resize it. If it's bigger, I resize to 1000 pixels on the long side.
I know, at some point resolutions will become so high that the cover will be blurry (2000 pixels on the long side would be the highest not-too-blurry resolution in my case), but no matter what resolution you choose, you'll eventually reach that point.
The only thing for which I use as a high a resolution I can find is maps.
