			I've further refined the problem - most PDF metadata editors cause chaos on a good portion of my files when they are v1.6.  If I have Acrobat Pro downgrade the PDF to v1.4 (simple old format whcih removes more complex compression, but can be made ebook size friendly with a simple profile to do downsampling) than any PDF metadata tool (such as this one here) can edit it and the e-Reader no longer crashes.  Interestingly, having a v1.6 PDF and not editing the metadata seems fine also.
