As a general rule, that will work. As a general rule, Kobo adds tables and columns to the database and doesn't remove them. But, occasionally they do. That means that if you use an updated database with a firmware version that is expecting particular tables or columns, you might have problems.
In 3.18.0 they removed a column from the user table. The column was only added in 3.17, so if you are going back before that, you will be safe. And from what was in the column during the 3.17.x firmware, I don't think it was ever used.
Personally, I take the occasional factory reset as a chance to do a cleanup. I keep adding books and not removing them when I have read them, so after a factory reset, I just send the unread or in progress books back to the device. That gives me an uncluttered device. Well, relatively uncluttered
