It sounds like the book has a faulty character encoding.
If you have Calibre, there is a very useful plugin called "Modify ePub" which has an option to "Encode HTML in UTF-8".
I would try deleting the old book from the device, use the above option in Calibre, and reload the book to the device to see if that fixes it.
