Here is an excellent roast chicken recipe.
When you catch the chicken, sprinkle some parsley, sage, rosemary, thyme and garlic down its throat, then shove a stick of butter or margarine either down its throat or up its backside.
Whichever it easier. Then sit it on its legs in a baking dish. Rub butter or margarine over it. Sprinkle with more of the spices. Then take and cover it in bacon. Cover the pan with foil and bake at about 275 F until the chicken lays down, 5 to 6 hours.
Note this is normally done after you decapitate, gut and strip the chicken.
