The help isn't useful,because there the same happens,the same difference in words.. So I first have to figure out, ok a tag.. how would the calibre translator call this.. then find the option.. but using words that are used in english to, the translator calls a tag a label, but that again is also an english word,then used filter which is also again an english word .. that is why I always try to find screenshots so I just know what nice people like you are talking about and how that function is called in my language, because really translated, a tag is not the same as a label...
And in the same small screen at the bottom, he uses 2 different translations for the same thing: remove tag.. ( on the left with the green: Tag verwijderen, and on the right with the red coss: Tag weghalen) like deleting and removing..

Use the Box at the top to add a Tag (value/name) the does not currently exist on the Left
It took me quite a bit of time to understand 'Tags'
Tags are 1 to many sorting Labels applied to an object
example "A book" can be:
Something to read
Something to provide weight when gluing something
Something to raise you monitor with
Something to for the Cat to sleep on (when the keyboard is in use

)
Those all could be tags on the same book
