While I perfectly understand your stance I often got the impression that people really enjoying choice seem to belong to a small group (no pun here). I don't consider eink readers to be geared towards option-affine users so I would assume that the larger user base consists of users that either don't care or is even irritated by too many choices.
I often have similar discussions with well-versed product managers, and this even for a highly technological product field with expert users. These are good discussions, trying to tackle different user types if possible. But things tend to get cluttered over time. My impression is that anything you do not really need should be out of your way ... well, this probably exactly proves your point of allowed to disable the slide gesture
And having many options can also be a nightmare to developers and test. Sometimes it is really best to keep it simple because otherwise due to time and investment pressure developers may screw things considerably. But just my rant...
