Cover art issues converting from LIT format

I have found that if I have a .LIT file that has existing cover art, and then I use the meta-data dialog to get new cover art I seem to end up with two sets of cover art after conversion to LRF or EPUB. First the "new" one I added, and then the original that was already present in the LIT file. I do NOT have the option to use the cover from the source file set.

Is there something I have missed and thus a way to specirfy I do not want the cover art in the LIT file carried forward into the converted files?
