Which file types do I need to transfer to new Kindle Paperwhite?

I have a large number of books on my 2012 Kindle Touch that are non-DRM and not purchased from Amazon. I'm purchasing a new Kindle Paperwhite and plan to transfer my books via USB.

When I opened the documents folder to start transferring the books to my computer, there are tons of files and I'm not sure which ones to transfer. Each book has at least two 'files' a MOBI file and a File Folder. Some of the file folders are empty, some of them have .mbp1 or .mbs files, some of them have both, some of them have other files.

Do I need to transfer all of these file folders, or just the MOBI files?
