That was not a full screen menu, that was a cropped down image. However, if you don't like it being wide like that for the time it takes to pick your program... then you are able to adjust it to a more comfortable width by dragging the right border.
It is different than windows 7... IMHO if you use it for a week I think you will get used to seeing it and will come to appreciate the benefits!

You can also resize the start vertically by dragging the top border.

I thought I could get it in Windows 10, by not putting any live tiles on the start menu. But then you cannot pin anything. And that "All programs" thing is way too bulky. I can see more entries in my leaner version of the start menu in Windows 7.

You can disable the live tile by right-clicking on the tile and selecting "turn live tile off". You can still pin and unpin to the start just fine. You can also resize tiles to your preference by right clicking and selecting resize (small, medium, wide, large).
