Probably no easy direct way. AFAIK iBooks 'shelf' is a proprietary metadata item. Moving metadata between different systems is more-or-less limited to the metadata elements defined in the Dublin Core specs.

If you can coerce iBooks into putting the shelf name into "tags" as something like "iShelf - blah blah" then you could use calibres Metadata Search and Replace feature to move the "iShelf..." tags to a custom column, or use those tags as the basis for a set of Virtual Libraries.
