In calibre it just gives you the option of embedding 1 font family... unless I'm mistaken?

Gerge means that you can have multiple embedded fonts in a book, and use them for different purposes in the book. You could have one font for body text, a different font for headers, etc. The "Publisher Fonts" option on the Kindle allows you to switch the embedded fonts on or off. What you can't do is have a choice of fonts, and switch between them.
