i do the removes in sigl. put each of those into find box and put nothign into replace box. then replace all on current files while css stylesheet is open.
but there are many variants on the font family think - that one was just an example.
eg a book may have
font-family: "Times New Roman", Times, serif;
I do not have an expression that removes all, though I think you can maybe tick a box in calibre extra CSS options to remove ALL font families
