I haven't done this in a while. I used to do it in iTunes by dropping the book on the book list. Maybe it doesn't work in recent versions though.
Otherwise, as kyteflyer suggested, you can use the open in feature from any app that you can load your book in, including Dropbox or similar, Mail, any file management app, GoodReader...
