I figured out the problem. Here's the solution (in case anyone in future is trying to solve this).
Open the book in Marvin.
Touch the footer with the "AA" icon.
Scroll down the options and choose "switch to publisher's formatting".
That brings back colored text.
I wish the app didn't default to this, but at least there's a toggle.
