Depends. Certainly you can (and, in fact, "should", not just "can") make people speak realistically, and not like a grammar textbook, in dialogue. (Although I do personally speak like a grammar textbook
). But you still need to make sure that you have apostrophes in the correct places, and all that sort of thing. Unfortunately this seems to be an area that a lot of people make mistakes with, as is all too evident when reading posts on MR.
