Joseph Balsamo is missing the last 30 chapters (which are absolutely crucial to the story, particularly if you plan on continuing with the series).
Countess de Charny is massively abridged. Seriously, about half of the book is missing. It also stops abruptly well before the actual novel ends... it's missing the last 300 or so pages.
Chico the Jester is the 450ish page abridgment (the version I have is about 1100 pages, and is still abridged). I don't know if an unabridged version of the book exists in English, but there are far more complete versions than the one included here.
...if you're interested in Joseph Balsamo and Countess De Charny, the Marie Antoinette omnibus in the mobileread library contains the (mostly) unabridged versions.
