For the purposes of the Plastc card itself, the eink section is certainly large enough.

A larger eink area would require more power to change, and would make the card not look like a credit card.

Not to mention that it would interfere with the chip placement. I don't know anyone making none rectangular eink (but I could be wrong about this).
