I didn't see Dutch listed for the "Hyphenate This!" calibre plugin But, I seem to remember someone having a success adding a Dutch hyphen file with this method.
Koreader has it hyphen files in "koreader/data/hyph". There are two types of files: pdb and pattern. pdb-files seem to have been inherited with coolreader. pattern-files add the languages Spanish and Greek and are modifications of Latex hyphen files. Latex also has no Dutch hyphenation files.

@Ken Could you remember where someone was succesful in installing a Dutch hyphen file? Maybe I could use the file to add Dutch hyphenation to koreader.

Edit: I found the tex file! It's here.

EDIT 2: I've added Dutch.pattern to my koreader fork and created a pull request.
