For most people MOUNTAINS OF MORNING alone does it.
If you think you can commit to the full series by its (well-deserved) rep alone, then starting from CORDELIA'S HONOR is recommended as the elder protagonists tower over the entire series, even when not present.
The way the series is structured, I fully expect the focus to extend to the next generation of Vorkossigans soon.

Oh, I hope we see action from the next generation!
I was going to suggest the volume "Borders of Infinity" ... Which has Miles in a hospital bed, recollecting past exploits. The first one is "Mountains of Mourning", which indeed usually grabs people! The third one is the one I ran into online, which grabbed me, the single tale "Borders of Infinity" (yes, confusing, so make sure you are buying a volume of 3 tales, not just the single tale -- tho that alone is worth it too!).
Then go back and start with his mother, to learn where he gets his chutzpah & charisma.

. Baen had them all on a CD at one point, tho that was when volume "Cryoburn" was sold as a hardback. I bought that, just to get the CD.
