I had that happen to me on the Galaxy Tab 2. Was able to installed the latest unofficial CM12.1 only when I just turned the tablet off; then did the "boot into recovery" thing (philz blackhawk twn) by doing the power + vol up. Got the boot recovery screen & arrowed down to install the nightly.

Not sure where the bug is but the touchwiz's menu has the reboot as the 1st selection & the select file to install is the 2nd selection. So when the recovery reboots, it just does the 1st selection & only reboots without trying to install the selected file.

Anyway, just do the install manually by selection as if something was broken which something is; sometimes the install of a new recovery also does the same thing if the "auto boot" wasn't unchecked.
