The EPUBMerge calibre plugin looks like the easiest way to do it for now. As long as it "looks pretty" I'll probably just do this.

THIS! Is the best. I've used OpenOffice.org/LibreOffice for many years and I have never seen "Master Document" until you and eschwartz pointed it out. I'm no power-user by any stretch, but the more I learn about the program, the more things I find I can do with it. It's probably the answer for my next time. If eschwartz' suggestion works, I won't need to do it for this book, but I will use it for the next one.
