The gap with sentences sounds as if it might be the widows/orphans settings in your ebook's css stylesheet. Check if there are any widows or orphans items and set the value to 1. Otherwise, you'll need to add the widows: 1 and orphans: 1. I prefer doing this in the style for the body.


Otherwise, if the space at the bottom of the screen is not tall enough for a line, the space will be left blank.
