I don't know anything about replacing the sleep mode image. If you install the utelnetd application, you can telnet to the device and see all of the filesystem, rather than just what is exported over USB. You can also use the pbterm application to get a command-line shell on the device if you don't have WiFi.
It's too bad the new version 5 firmware no longer supports making choices of the reading application via the "Open with..." menu. One could then open comic epub files with pbimageviewer, and text epub files with one of the usual EPUB reading applications. Unfortunately, it doesn't look like PocketBook offers a version 4 firmware for the Sense. Maybe they'll put back the old "Open with..." functionality at some point.
