E-book would probably be the most accurate. But ebook and eBook are the ones being used by the majority of users (including me) and developers so that is the one that will most likely win out. I would find e.book to be more of a tech spelling then ebook or e-book.

Ebook is also one of the few words of that nature that I don't despise, I generally hate any of the eWords, iWords and xWords so popular today. Every new product or marketing term that uses that format I tend to wish they'd stick it in their aWord.
