Generally speaking, one cannot do that, since you could, for example have a custom column named #title, if one did not prefix it with custom_ then you would end up with two title entries in the bibtex catalog.

What would be needed is for the bibtex catalog to accept a setting that maps custom column names to bibtex field names. However, since the person that developed the bibtex catalog plugin is no longer active, I doubt that would get implemented unless you did it yourself.
