this is not 1 bit black and white. This is 4 bits.

Emailed the DaSung guys and it also turns out that they're outputting around 10Hz - so their refresh rate is about 100ms for 4 bit. so it's about 450% faster than what has previously been believed possible.
Would like to know how this is possible too!
